This fast-growing chain of the Brazilian-themed restaurants called churrascarias — the word refers to a restaurant where meat is prepared churrasco- style (a translation from the Portuguese for "barbecue") — serves up rotisserie-roasted filet mignon, chicken, lamb, pork and fish. The waiters at Fogo de Chão Brazilian Steakhouse go from table to table, equipped with a knife and skewer, slicing offerings upon request. (The name is pronounced fo-go dee sha-un.) "It's a unique, authentic experience that brings an entertainment element to dining," said Jennifer Leavitt, vice president of marketing at Kemper Development Co., owner of the Seattle-area Bellevue Collection, where a Fogo de Chão is being built in the Lincoln Square Expansion, a mixed-use addition to the Collection. Churrascarias, whose origins hark back to the fireside roasts of the gauchos of South America's grassy pampas lowlands, enjoy growing mainstream popularity beyond that continent, in the U.S. and elsewhere.
