54 S C T / D E C E M B E R 2 0 1 6 Sweetgreen's natural food and lifestyle are generating fans and leasing deals By Jesse Serwer Hunger for growth N icolas Jammet, Jonathan Neman and Nathaniel Ru were undergrads at Georgetown University nine years ago when they established the Sweetgreen food chain, opening their first shop in the District of Columbia. The concept was a reflection of their youthful idealism, offering healthy, organic fare — with a side of environmental consciousness. Sweetgreen now operates roughly 60 shops across seven states plus the District of Columbia. Everything is made on-site from scratch, using produce delivered each morning from local suppliers. A chalkboard posted at the counter identifies the source of each ingredient — from the bakery that baked the bread to the farm that grew the arugula. This idealism has generated profits.
