Chinese-Peruvian cuisine has roots in the arrival of Chinese laborers to Peru in the 19th century, and there are now thousands of chifa restaurants around the coun- try. The best-known of the dishes is chaufa, a Cantonese- Peruvian-style fried rice with a stronger flavor than the tradi- tional fried rice, owing to the inclusion of more meat and vegetables, garlic and Peru- vian spices. The chain, which fran- chises all the restaurants, including those in Peru, will open at least 12 this year across its current markets. The company is projecting a same-store sales jump of 6 percent for the year. "Our growth coincided with the mall boom, and we have ac- companied many regional developers in their expan- sion," said Montes de Oca. The menu is mainly the s a m e a c r o s s a l l m a r k e t s , though with a few adapta- tions regionally — chicken with cashews on the El Sal- vador menu, for instance. In Chile many diners ini- tially shunned the sweet- and-sour options, prefer- ring salty dishes instead, but palates are changing, Montes de Oca says. Chinawok has secured a master franchiser in Mexico for its plans there next year. The company is also in talks with U.S. mall operators and potential franchisers. "Chinawok owes its success to its ability to present chifa plates in a modern manner without losing the basic flavor of the dishes," said Rolando Arellano, president of Arel- lano Marketing, a Lima-based research firm that has worked with Chinawok. "The firm has been extremely careful in the standardization of recipes and presentations, generating trust in its markets."
