r e T a i l i n g T o d a y Bowled over pinstripes serves italian-american cuisine with a side of fun By Kenneth Robeson T he PinstriPes restaurant chain is moving its italian-american cuisine into upscale shopping centers — and taking its bowling lanes and boccie courts along too. the company operates three restaurants in Greater Chicago and one in Minnesota. the next, which is just about starting construction for an anticipated opening next year, is pegged for Merrill Cos.' $580 million 128 SCT / m a y 2 0 1 3 Prairiefire at Lionsgate lifestyle shopping center, in Overland Park, Kan. "We'll be in close proximity to the american Museum of natural history, a theater and a variety of other quality restaurants," said Pinstripes founder and CeO Dale schwartz. Further, executives are finalizing zoning approval for a 30,000-squarefoot space in Vornado realty trust's shops at Georgetown Park, in Washington. also under contract is a spot at Kilroy realty's 1.8 million-square-foot One Paseo town center development, in san Diego, and management is in discussions with developers about additional sites, schwartz says. surely, the idea of a restaurant-entertainment concept that enables patrons to add calories and then burn some of them right back off, all on the same night and under the same roof, will continue to appeal to many. "the entertainment component certainly gives people an opportunity to stay active and do something fun to complement the dining experience," said schwartz. the bistro's offerings include pizzas and flatbreads, homemade soups, salads, sandwiches and desserts. Chicken marsala or parmesan goes for $17, pinenut crushed halibut can be enjoyed for $25, and filet mignon is served for $27. american and italian wines are available by the glass or bottle, and specialty beers and cocktails are on offer too. the restaurant provides gluten-free options and a children's menu. "We typically look for locations in relatively close proximity to just wonderful communities," said schwartz,
